Deciding what to eat for lunch is tough enough while in an office located somewhere with a ton of options. Now, factor in working from home and not only having to decide if you should order, but if not, what to make. And even if you’re like me and enjoy cooking, coming up with three square meals a day (because we shouldn’t skip breakfast!) can be more than a little stressful, no matter how big or small.
On the bright side, however, without the nosey co-workers, or rules about what type of food can and cannot be put in the microwave, making your own lunch at home isn’t that bad. And allows so many options.
When you put a pause on ordering in, not only will making your own lunch save you some coin, but it’s also a great way of forcing yourself to take a break. With your hands engaged in the cooking or prepping process instead of being glued to the phone or keyboard, you can truly put your mind at ease. You can step away from the work or useless scrolling and take in the present moment. If only for a few minutes.
So, to take some of the pressure off and add a little variety to your at-home lunch routines, I’ve compiled a list of 11 lunch recipes for you to try this week. Ranging from super simple, to a little more complex–depending on your style, each of these can be achieved by even the most novice in the kitchen.
